I have really been loving creating meals in a skillet lately! Skillets meals seem to come together fast and I love the fact that there is just one dish for clean up after. This curry chicken stew is just one of my recent creations in a skillet. I have taken a Canadian classic stew and added a twist with the addition of some curry sauce to mix in a little India for a fragrant and gently spiced dish that makes a perfect family dinner for a cold evening. How can you go wrong with simple ingredients like potatoes, green beans, carrots, onions, chicken and some delicious Tikki Masala sauce which is a rich blend of coriander, lemon and lemon ? I invite you to discover some Patak’s too, by adding some to a favourite dish!
This dish starts with boiling the vegetables first before they go into the skillet. This helps to reduce overall cooking time of the dish, while the addition of the Tikka Masala curry sauce at the end for a few minutes of cooking keeps it flavourful and smelling wonderful!
Curry Chicken Stew
{Serves 4}
Ingredients:
2 cups small potatoes
2 carrots, peeled and cut into chunks
1 cup green beans
1 tablespoon oil
2 chicken breasts, cut into chucks
1 white onion, sliced
1 pouch of Patak’s Tikka Masala sauce
chopped cilantro for garnish
Directions:
1. Bring a medium pot of water to boil. Add potatoes and carrots. Turn back heat to a medium. Cook until potatoes and carrots are fork tender. {About ten minutes} Add green beans into the water when the potatoes and carrots are fork tender and cook until beans are bright green. Drain.
2. While vegetables are cooking, heat oil in skillet at medium high heat. Add chicken and onion and stir fry quickly until chicken is no longer pink and onion is translucent.
3. When chicken is cooked, add drained potatoes, carrots and green beans to skillet.
4. Open and pour one pouch of Patak’s Tikka Masala cooking sauce over chicken and vegetables. Stir gently and cook on medium heat for 4-5 minutes. This helps to release the exotic flavours and spices of the curry sauce. Garnish with chopped cilantro and serve.
This Canadian classic is so fun with the addition of exotic Indian spices. It tastes amazing on a cold winter’s day…the perfect meal to warm up your spirits and your belly.
