We like to live up summer to the fullest…which is why we still have a camping trip or two left before school starts! So I thought I would share with you a yummy camping breakfast that our whole family loves…and we prepared it with a brand new camping stove provided by Canadian Tire.There is nothing like a great hearty breakfast to start off a full day of boating, swimming & fishing!
This entire breakfast is so easy to make with the right BBQ and tools, but let me come back to that in a minute. Let’s get this breakfast rolling first, shall we?
This first step in the Bacon & Egg Cups is to cook the bacon. We usually cut our bacon in half, but you can easily cook the bacon in full strips. We cooked our bacon on this FLAT GRILL PLATE until it was nice and crispy.Make sure the bacon is just the way you like it before moving onto the next step!
While the bacon is cooking, give a 6 cup muffin tin a spray with a cooking oil. Then line the cups with the cooked bacon and crack an egg into each muffin cup. Season with salt & pepper.
1.5 cups flour
1 tablespoon sugar
3 tablespoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 3/4 cups milk
2 tablespoons oil
1.Measure all dry ingredients right into a medium size bag.
2.When you are ready to make the pancakes, pour the dry ingredients into a large bowl.
3. In small bowl, mix together the beaten egg, milk and oil.
4. Make a well in the center of the dry ingredients. Pour in wet ingredients and mix gently until combined.
