Happy Friday everyone! I am so glad the weekend is here. What are your plans for the weekend? My husband and son are off to the very first hockey tournament of the season and I am planning to paint our living/dining area while they are gone. I love transforming a room with paint and I have been wanting to make this change for over a year now.
Fabulous. There is just no other word for these soft pumpkin cookies with the incredible blend of chocolate, butterscotch and peanut butter chips.
And with a little chocolate drizzled on top….they are every good as any gourmet cookie you might pay oodles of money for elsewhere…except these are homemade and fresh right out of your very own kitchen. These cookies did not last long in our house and the triple chip burst of flavour was a huge hit!
Of course, if you don’t have butterscotch and peanut butter chips on hand, just chocolate chips in this recipe will work just fine too! But the triple chip keep it super rad, you know?
Chocolate, Butterscotch & Peanut Butter Chip Pumpkin Cookies
{makes 3 dozen cookies}
Ingredients:
1/2 cup white sugar
1/2 cup brown sugar
1 cup butter, softened
1 cup canned pumpkin
1 teaspoon vanilla
1 egg
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup each chocolate chips, butterscotch chips and peanut butter chips
1/2 cup chocolate chips for drizzling
To make:
1. Heat oven to 350 degrees.
2. In bowl, beat white sugar, brown sugar and butter until light & fluffy. Add egg, vanilla and pumpkin and blend well.
3. Add flour, baking powder, soda cinnamon and salt and mix well. Stir in chips.
4. Drop dough by rounded teaspoonfuls on cookies sheets.
5. Bake for 10-11 minutes or until edges are light golden. Remove from cookie sheets. Let cool completely.
6. Melt 1/2 cup chocolate chips and drizzle over cookies for final finish.
These cookies are great to share too! I always like to give homemade cookies to friends or neighbours.
