By next time this week, both of my kids will be back at school and the morning craziness will begin afresh for another academic year. That means that lazy mornings and late breakfasts will be relegated to weekends only, and quick breakfasts will rule once again. My teenage son’s favourite fast breakfast is a 5 Minute Mexican Omelette. There is no heartier breakfast than a fast 2 egg omelette, which can be ready in a mere 4-5 minutes. With one frying pan, 2 eggs, a bit of salsa and some shredded cheese, this is a very filling breakfast that will start any student off with a full load of high quality nutrition for a day of learning and physical activity. Omelettes have been our super quick go-to meal for years, as there have been many early mornings and late nights where I have whipped up a fast omelette for a hungry child that is needing fuel for hockey or skating.
Eggs are one of nature’s most nutritious foods. One large egg contains only 70 calories and is packed with protein, which is essential for building and repairing tissue. Muscles, organs, skin, hair as well as antibodies, enzymes, and hormones are all made from protein. Eggs are considered the gold standard for high quality protein, in addition to the vitamins, nutrients and other healthy benefits they offer. As a busy family with extra-curricular activities every day, I feel really good about serving my busy teens meals made with eggs.Eggs are an affordable protein source and can be stored in the refrigerator for up to three weeks without affecting their quality. According to Canada’s Food Guide, two eggs are considered a serving from the Meat and Alternatives food group. With 2 packs of hard-boiled eggs found in the deli section of grocery stores, reaching for a high quality protein meal or snack has never been easier. I often like to have a few of these packs in the deli drawer of our fridge because they make a great to-go high quality meal or snack packed in a lunch box with an ice pack.
Omelettes are considered comfort food in our house, and they were one of the first meals I showed my children how to make when they were learning to cook. Both of my children can make omelettes and are masters are choosing assorted ingredients to change up the flavours depending on what they are in the mood for. The 5 Minute Mexican Omelette is my son’s favourite. Made with salsa and cheese, and served with fresh tomatoes, green onion, more salsa and a bit of sour cream, it is something that he enjoys a couple of times of week. And “breakfast for dinner” is always popular in this house!
As I mentioned above, this is a two egg omelette, which can be made in a personal size or 8 inch frying pan on medium-high heat in just a few minutes. To begin, just whisk two eggs together is a bowl and pour into a pre-heated frying pan. If you have never made an omelette before, it may seem a bit intimidating, but the trick is to pour the eggs into an already heated frying pan so that the egg can begin to cook almost immediately, which makes for easy flipping and folding.
- 2 eggs
- 1 teaspoon butter
- 1/2 teaspoon Tex Mex seasoning {optional}
- 1 tablespoon salsa
- 1 tablespoon shredded cheese
- For serving: {optional}
- Salsa, sour cream, diced tomatoes, shredded cheese, green onions
- 1. Preheat an 8 inch non-stick frying pan to medium high heat. In a bowl, whisk together eggs and Tex Mex seasoning. To heated frying pan, add butter and swirl around so that it coats bottom of frying pan.
- 2. Pour eggs into heated frying pan. Let cook for 1-2 minutes, while shaking pan gently once or twice to make sure egg covers entire bottom of pan. {The egg will cook very quickly when it hits the heated frying pan so watch closely.} Add cheese and salsa to one side of omelette. Using a non metal spatula, gently lift edge of omelette around the entire pan, and then fold the omelette in half onto itself.
- 3. Using spatula, move omelette to the center of the frying pan and finish cooking until egg is no long runny...about 1 minute.
- 4. Slide omelette from frying pan onto plate and serve with salsa, sour cream, etc.
If you have never tried your hand at making an omelette, I really encourage you to try. There is nothing better than the tasty deliciousness of eggs cooked this way. And there are so many flavours that can be added in such as: ham, bacon, peppers. onions, mushrooms, cheese…and the list goes on.
Of course, I always like to serve breakfast with a little side of fresh fruit. It makes for a delicious looking plate of food!
