No one ever complains about having cheesefor dinner and that makes this busy mom very happy! I discovered this quick and easy dish one day when my son was extremely hungry and he didn’t want to wait for spaghetti sauce to heat up. He was impatient and wanted to eat his spaghetti noodles plain with cheese. So who am I to get in the way of a hungry boy and his cheese? And then I discovered that the whole family loved noodles and cheese for a fast and tasty meal. Since that time, this cheesy dish has become a staple in our house and I serve it at least once a week. It takes under ten minutes from start to finish and lends itself well to different types of cheese too.
