Who doesn’t love nachos? I mean seriously…do you know one single person who doesn’t like nachos? I don’t. I think it’s a finger food liked by everyone that is fun and casual. These scrambled egg breakfast nachos are a fun take on the traditional nachos and are an easy way to serve eggs for breakfast that are unusual but easy to make and delicious! All that is needed is a skillet, a carton of liquid eggs {or 8 eggs} and toppings that your humans love. This recipe is a wonderful addition to easy grilling or camping meal ideas as well. My son loves nachos any time of day, and he quickly dug into these nachos as soon as I put my camera away!

- 1 carton of Burnbrae Farms Simply Eggs product
- 1/2 cup diced ham
- 1/4 cup sliced green onion
- 1/2 cup diced tomato
- 3/4 cup shredded cheese
- Cilantro for garnishing
- Nacho chips
- Heat skillet to medium heat. Add carton of liquid egg product and using a wooden spoon, scramble eggs until eggs are cooked.
- Remove from heat and sprinkle ham, green onion, tomato and cheese. Cover and return to heat until cheese is just melted.
- Remove from heat and garnish with cilantro if desired. Serve with nacho chips, salsa or ketchup.
- Use whatever toppings you like.
