Nest Cookies For Easter - Echoes of Laughter

If there is one thing that I love more than Christmas baking, it’s Easter baking. I adore the soft and happy feel of pastel colors and adding those colours to baking treats is something that I completely love. These Nest Cookies for Easter marry a soft and tasty cookie flavoured with the taste of delicious eggs and butter with a coconut ‘nest’ and candy-coated chocolate eggs to create a cookie that embodies everything that Easter is about…new beginnings, new life, growth and renewal. To me, the egg symbolizes all of those wonderful things about this time of year, and it really is a time to celebrate.

These Nest Cookies are very easy to make and decorating the cookies is the perfect family time activity. And even though the decorating might involve lots of tasting and sampling, hanging out with family is what makes it all worthwhile.

Nest Cookies for Easter

{makes approx. 2,5 dozen}

Ingredients

1 cup butter

1 cup sugar

2 Burnbrae Farms eggs

2 tsp. vanilla

3 cups flour

1.5 tsp. baking powder

1/2 tsp. saltTo decorate:
1.5 cups vanilla frosting
1.5 cups shredded sweetened coconut
yellow food colouring
candy coated chocolate eggs

To make:

1. Preheat oven to 350 F. Cream butter and sugar together. Add egg and vanilla and beat well.

2. In separate bowl, stir together flour, salt and baking powder. Add to sugar mixture and blend well.

3. Roll dough into 1-inch balls and place on ungreased cookie sheet. Dent each ball with the top of a bottle cap to make a place for the nest.

4. Bake for 8 to 10 minutes or until bottoms are just golden brown.
5. While cookies are baking, mix a few drops of yellow food colouring into coconut to may ‘hay’ for nests.
6. When cookies are cool, add a small amount of vanilla frosting to ‘nest’. Sprinkle yellow coconut on top of frosting and decorate with candy-coated eggs.

Now you have some beautiful cookies that are perfect for sharing and giving!
