I hadn’t made a quiche for a long time when this delicious-looking recipe from the Burnbrae Farms Recipe Nest really caught my eye…Crustless Egg and Ham Quiche.

This easy main dish is lighter than a conventional crust quiche but still packed with satisfying flavour. |
INGREDIENTS
1 pkg | frozen chopped spinach, thawed | 300 g |
1 cup | finely diced ham* | 250 mL |
½ cup | shredded low-fat Swiss cheese* | 125 mL |
¼ cup | grated Parmesan cheese* | 50 mL |
1 carton | Naturegg™ Simply Eggs™, well shaken | 250 mL |
½ cup | milk | 125 mL |
½ cup | low-fat sour cream | 125 mL |
½ tsp | each salt and pepper | 2 mL |
¼ tsp | grated nutmeg | 1 mL |
DIRECTIONS
1. Squeeze all moisture from spinach and place in bowl. Toss with ham, Swiss and Parmesan cheeses. Spread evenly on bottom of greased 9” (23 cm) glass pie plate.
2. Whisk together liquid eggs, milk, sour cream, salt, pepper and nutmeg. Pour over spinach mixture. Place pie plate on rimmed baking sheet.
3. Bake at 350°F (180°C) 50-55 minutes or until set around edges but still softly set in the centre.
