We have had a bit of a rainy long weekend, so I have been mixing up some after school treats for the kids, who go back to school in just a couple of days.
I couldn’t resist playing ‘dress up’ with these adorable owl stickers I found at Michaels.
I made them not only for the kids, but I am going to have some girlfriends over for tea and muffins the first day of school.
Chocolate Chip Pumpkin Muffins
{makes 24}
4 eggs
2 cups sugar
2 cups pumpkin
3/4 cup vegetable oil
3/4 cup apple sauce
3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2 cups chocolate chips
In large mixing bowl, mix egg, sugar, pumpkin, vegetable oil, and applesauce until smooth. In another bowl, combine flour, baking soda, baking powder, and salt. Add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin tins 3/4 full. Bake at 400 degrees for 16-20 minutes or until muffins test done. Cool in pan for 10 minutes. Remove to wire rack to finish cooling. If desired, add cream cheese glaze and mini chocolate chips.
Cream Cheese Glaze
1/2 cup cream cheese
1 cup icing sugar
water
Mix cream cheese and icing sugar until smooth. Thin with water until it becomes soft enough to drizzle with a spoon over muffins. Sprinkle with mini chocolate chips.
The weather has turned chilly here at night. I have actually ‘caved’ in to the thoughts of the end of summer and wore flannel jammies to bed last night because I was so-ooo cold. And I enjoyed a muffin with a nice cup of hot tea.
On the agenda this week….decorating for Fall. Yeah!

I just found your blog and I am loving all of the great ideas especially the lunch organization. I made these yummy muffins yesterday, delish. One little comment is that in the directions you omitted adding the 4 eggs, I always double check before finishing as I have in the past forgotten an ingredient and noticed this.
