Although Anjali’s version of this recipes used dry spices mixed with olive oil, I used a ready-made Patak’s curry paste to make it even easier for the home cook.
Ingredients:
2 tablespoons Patak’s Mild Curry Paste
2 tablespoons light olive oil
2 heaping tablespoons of soft white bread crumbs
1 head of cauliflower, broken into florets
good pinch of salt & pepper
To Make:
1. Preheat oven to 400 degrees.
2. In small saucepan, gently heat the Patak’s Mild Curry Paste while whisking in the olive oil. Heat gently for 2-3 minutes. This step helps to release all the spices and bold flavours of the paste. Remove from heat and let cool.
3. In large bowl, mix all the ingredients together and spread out on a baking sheet for a single layer. {Use parchment paper on baking sheet for easy clean-up.}
3. Roast for 35-45 minutes until crunchy and starting to colour around the edges.
4. Serve in a bowl for the family table, or skewer for serving as an appetizer. Add salt & pepper to taste if required.
*Sprinkle with finely chopped cilantro and/or green onion if desired.
