Admittedly, I am not a fun of tortellini by itself, but this is a soup that I love and it has become a great dinner for us on our ‘meatless’ dinner night.
Three members of my family also love this soup….my little guy is “OK” with it.
This soup is great for cleaning out your vegetable drawer as it can take almost any vegetable in it.
When I recently made this soup, I used up some white onion, red onion, spinach, kale and broccoli…I just threw it all in so my vegetable crisper was cleared out of this and that.

It is also a great ‘rainbow dish’…..it has all the colours in it….green, yellow, red and orange.

Tortellini Soup
2 tablespoons oil
3-4 garlic cloves
1 large onion, diced
1 teaspoon paprika
3-4 stalks celery, diced
4 large carrots or small bag mini carrots, diced
1 large can diced tomatoes
1 bag of spinach, or bunch of kale, or bunch of broccoli, cut to spoon size
4 litres stock…vegetable, chicken or beef
1-2 small bags of tortellini, any kind
1-2 bay leaves
salt & pepper to taste
drizzle of honey
drizzle of balsamic vinegar
Directions: Heat oil in bottom of large soup pot. Add onions, carrots, celery, garlic & paprika. Cook, stirring frequently, until vegetables are tender.{Add a little stock to cook veggies if they are starting to get too brown.} Add salt & pepper. Add can of tomatoes, spinach, stock and bay leaves. Bring to a boil. Add tortellini and turn heat to medium. Cook until tortellini is done. Finish off with drizzle of honey and balsamic vinegar. Taste & add salt & pepper to adjust as needed. Turn heat to low until ready to serve. Remove bay leaves before serving. Do not overcook soup or tortellini will break up and get mushy.This soup will thicken as it sits…more stock can be added as required. Usually I add more stock to the soup the next day. Serve with shredded cheese, crusty bread and a green salad.
