Welcome back to Day 2 of Camping & BBQ Recipes Week.
Today I am sharing a recipe for a hearty Lumberjack Breakfast made with sausages, hash browns, eggs, cheese and whatever other toppings you desire.
This camping recipe made in a tin foil packet is easy, fun and takes very little time.

Twice a year I allow my kids to have junky, sugary cereals as treats…Christmas and Camping.
On a typical camping morning, after the Captain Crunch & Cinnamon Toast Crunchies consumed early in the morning have worn off, the kids come looking for a ‘real’ breakfast.
This is what we make for a change from the typical bacon and eggs.
Lumberjack Breakfast Packets.
For this recipe you will need:
Sausages or Canadian bacon
Frozen hash browns, or leftover cooked potatoes, diced
Eggs
Chopped tomatoes and green onions, if you like
Shredded cheese, any kind.
Directions:
~Kids love to help make their own breakfast packets!~
Lay sausages or Canadian bacon on a double layer of foil that has been sprayed lightly with cooking spray.
It is best to have the meat on the bottom so it can receive direct heat from the grill to cook properly.
{Leave out the sausages if you don’t like meat, and just start hash browns and a big dab of butter.}
On top of the sausages, add a handful of frozen hash browns or diced leftover potatoes, an egg or two, and diced tomato and green onion if you like.
Salt & pepper to taste.
You can also add Cajun spice, or Old Bay spice or whatever spice your family likes.
Wrap up packet and place on a hot BBQ for 15-20 minutes or until meat is thoroughly cooked.

After the packet has cooked for 15-20 minutes…
I like to open it up and add shredded cheese and put it back on the BBQ with the cover down to melt the cheese for a few minutes.
Once the cheese is melted,.. presto….a delicious and very filling breakfast..or brunch is ready!
Add some fruit and you have a picture perfect meal.
After this hearty breakfast is eaten, everyone in our family usually scatters for the rest of the day to play in the woods, ride bikes, or head out in the boat for some fishing or swimming!

Yummm, I love foil packets. I learned about doing these several years ago when my nephews were in the boy scouts but I have never heard of a breakfast pack. I am going to have to try this for sure. Sounds and looks so tasty. Thanks for sharing.

Hello! Any guess how long I would cook the packets in the oven, if, say, I was the type of person who avoids camping (and pretty much the out-of-doors in general)? Thanks so much!
So when you're camping, do you stick the foil packets in the coals of a campfire or do you just stick them on the BBQ? If so, is it a charcoal grill? Every time I've been camping and we've done the "tinfoil dinners", they haven't cooked very well.
Do you ever pre-make these at home and freeze them? It would be so nice not to have to assemble "in the field"
Hi. I love this recipe and can't wait to try it!! I don't have any problem cooking with tin foil but I can't eat from it (its like nails on a chalkboard to me lol) do you think if I used parchment paper on the tinfoil before adding the food it would work to help get it out of the foil??
